Shannon Smith opened La Casa Burrito in January 2018 after 25 years of working for corporations. “I wanted to be done with the corporate world,” she told the Messenger.
Her uncle had a business selling burritos at music festivals such as Coachella and Bonnaroo, and Smith had worked with him. So she decided to try a similar business but with a settled location.
Smith and chef Valerie Christopher have kept the quick service business model during weekday lunches, but have added a full sit-down menu for weekends and evenings.
They’ve also expanded beyond burritos to chimichangas, fajitas and tacos. The burritos themselves are crafted to meet a wide variety of tastes including buffalo chicken and chicken ranch options and a BLT quesadilla.
Smith calls it a “northeast restaurant with a southwestern flair.”
Although originally from Burlington, Smith moved out of state before returning and eventually settling in St. Albans about six years ago. “The changes that they made to downtown solidified that I thought this place could make it in St. Albans,” she said.
She and Christopher are still experimenting with new dishes and balancing the lunchtime quick service with being a full sit down restaurant in the evening. “We’re changing daily, weekly,” said Smith. “Things that work, we stick with.”
“We’re just letting our customers guide us,” she said.
